Everyone in my family loves meatloaf, but they also are veryyy picky with how it is made. Can’t be too firm, can’t be too mushy, can’t have too much of ketchupy taste, can’t have too many onions and also can’t be plain and taste like a giant meatball. SO! I have finally made a meatloaf that everyone looks forward to on meatloaf night.
Ingredients– This recipe serves 4 people and is easily doubled.
1 lb. – 1 1/2 lb. Ground Beef- Or a mixture of ground beef and ground pork
1/2 Cup of Bread Crumbs
1/4 Cup of Tomato Sauce- Or ketchup or a mixture of both. Use what you have!
1/2 Cup Onion- Diced and sauted a bit if you have time!
Dash of Worcestershire if ya got it!
Seasonings- Be generous! I do a minumum of a teaspoon of each, no need to measure just make sure it looks nice and seasoned! Garlic powder, Onion Powder, Salt, Pepper, sometimes I throw in a dash of Sriracha!
For the Topping: Make it how you like! You can do:
- An all ketchup glaze by just covering the top with kethup
- Ketchup mixed with a dash of Sriracha- This is how my family likes it
- Half ketchup half barbeque sauce- When we don’t have Sriracha I do this
- Ketchup with a little brown sugar and a generous amount of pepper
Preheat oven to 350 degrees. Prepare a sheet pan (not a meatloaf pan!) some some nonstick spray.
I know it’s an extra step that nobody wants to do, but it turns out better if you do! If you have the time, cook your onions a bit in a saute pan with some oil or butter just to soften them a little. -You can skip this step if you choose!
In a bowl combine ground meat, eggs, breadcrumbs, tomato sauce, Worcestershire, onion and seasonings.
*A little tip I have learned and use often: if your meatloaf feels too wet, take a slice of sandwich bread and rip it up in tiny pieces then mix meatloaf again. It absorbs extra liquid pretty well!
Form into loaf shape on your pan and place in oven for 1 hour. Do not add the topping yet!
After an hour, remove from oven and add whatever glaze or topping you choose. If you like it plain, just leave in the oven.
Continue cooking for 15 more minutes. Remove from oven, let rest at least 10 minutes then serve!
Pair with: Mashed potatoes, buttered noodles, mac and cheese, baked beans, salad, veggie or rolls!
