I use this recipe for meatball subs but it’s also great when you feel like putting in extra work on spaghetti night. I love (okay more than love) my cast iron skillet. My husband got me a whole set of cast iron skillets and pots and they are my go to for everything. Using a cast iron skillet is great for this recipe because you can brown the meatballs in it and then pop it right in the oven. Meatball Ingredients – This recipe is easily doubled.
1 Lb. Ground Beef
Half of an Onion- diced
1 Egg- lightly beaten
1/4 Cup Italian Breadcrumbs
1/4 Cup Parmesan Cheese- grated or shredded, use what you have
Season to Taste with Garlic Powder, Onion Powder, Italian Seasoning, Parsley, Salt and Pepper
1 Tablespoon Olive Oil- Vegetable oil is fine too!
1 Jar of Marinara- Or spaghetti sauce, use what you have!
Mozzarella Cheese- Slices or shredded
Pack of sub rolls, hoagie rolls, whatever ya got.
Preheat oven to 375 degrees.
Use a cast iron skillet or oven safe skillet. If you don’t have either one, just use any sort of casserole dish or even a sheet pan. The only thing you need to do different is to transfer the meatballs from your skillet to your oven safe dish.
Mix together ground beef, onion, egg, breadcrumbs, parmesan cheese and seasonings in a bowl. Form into meatballs, you should get around 12. Heat up your skillet on medium high heat.
Place meatballs in skillet, let brown, flip over and let brown again. This is just getting that crusty good meatball taste, it is not cooking the meatballs. You just want them nice and browned.
Once browned, place your skillet in the oven for 10 minutes. Then remove from oven and add marinara sauce and mozzarella cheese. Place back in oven for another 10-12 minutes.
Now all you need to do is scoop out the meatballs and add to your bun! Serve with salad, fries or onion rings!
*If you just want this recipe for the meatballs, skip the step where we add the sauce and cheese and just keep the meatballs cooking in the oven.
