These are a great appetizer or easy snack that is low carb and also tastes bomb. If you have leftover bacon (who ever has that?) but if you do, this is a great time to use it.
6 Jalapeños- Slice length wise and remove seeds
1/4 Cup Shredded Cheese- I prefer Cheddar or Colby Jack
Half a Block (4oz.) of Cream Cheese- Softened
1/4 Cup Crumbled Bacon- You can also substitute with bacon bits
Seasoning- Add a dash of paprika, garlic powder, onion powder, salt and pepper
Preheat oven to 400 degrees. Line a sheet pan with foil and some non stick spray for easier cleanup.
In a bowl, mix together softened cream cheese, cheddar cheese, bacon and seasonings.
Scoop spoonfuls into jalapeño halves and place on baking sheet.
Bake for 15 minutes and serve.
