Chicken Kelly

Also called Muenster Chicken but my mom calls it Chicken Kelly, so I call it Chicken Kelly. This was my older sister’s birthday dinner every single year. I didn’t enjoy it as much when I was younger (absolutely no idea why) but man, I sure love it now. And so do my kids! And husband.. so, we’ll call this meal a success. You must plan the day before. I know, kind of annoying, but worth it. It can also get messy, still very much worth it. This is also a great meal for company because it serves a lot and tastes super rich and yummy. Feel free to half the recipe if need be, but left overs aren’t a bad thing.

Ingredients

Chicken Breasts – about 2 pounds, cubed.

Egg Yolks- 5 yolks, be sure to separate.

Stick of Butter- or margarine, I just prefer butter.

Seasoned Breadcrumbs- 2-3 Cups, I usually just dump a bunch on a plate.

1 Package Muenster Cheese- Or 10 Slices from the deli.

1 Can Chicken Broth

Mushrooms if you choose- sliced, any kind and however much you prefer. Just add in raw, they will cook plenty in the oven.

*This meal must be made in advance. At the very least the chicken and egg mixture must sit for a minimum of 6 hours.

Place cubed chicken breasts in a large ziplock bag or container with a lid. Add egg yolks to the chicken, shake the bag or stir to be sure they are coated. Let sit in fridge overnight or at a minimum of 6 hours.

Preheat oven to 350 degrees. Now is where things get a little messy. You will noticed a lot of the egg has been absorbed by the chicken. You just take the pieces of chicken, roll in the bread crumbs and set aside. Take a 9×13 casserole dish and spray with some non stick. If you have a cast iron pan, great! If not, a regular frying pan will do! Add half a stick of butter (or margarine) to your pan and set to medium. Brown chicken on all sides and add to casserole dish, this may take a few rounds to get it all done.

Alright, the hard part is done! Now you can go ahead and pour the chicken broth right on over the chicken. If you are using mushrooms, now is also the time to add them. Next, take your package of muenster cheese and use every slice to cover the chicken. Bake uncovered for 40 minutes and thank me later.

  1. what is “muenster” chicken in the ingredient list; ,, and what size can of chicken broth ,, and ounces of muenster cheese (I usually buy in the deli section). Also are the mushrooms left whole or sliced, and raw or sauteed. I assume these are the button mushrooms. Lots of questions here I know but sounds delicious.

  2. Thanks Lori! Guess I need to be more descriptive, I apologize! There shouldn’t be a “Muenster chicken” in the ingredient list, it is just another name for meal.

    If you buy cheese in the deli section, I would just ask for 10 slices since that is the amount that comes in the package. A regular, 14.5 oz can of chicken broth will do! My mom actually makes it with a little extra, but I like it just using a single can. I would slice the mushrooms and you can just throw them in raw. They’ll cook plenty in the oven. I’ve used white button and portobello, whatever you like! It’s super delicious and worth the effort, I hope you try it!
