Cajun Chicken Drumsticks

These drumsticks are…amaze. First of all you can get drumsticks cheappp. They take an hour to cook but if you have time, plan a couple hours in advance! The key to these drumsticks is starting with a dry chicken leg. If you know you will be making this, stop what you are doing, go get your chicken legs, take them out of the plastic, put them in a bowl and straight in the fridge! Do not cover them. If that weirds you out (like it does me) put a paper towel over them. If you don’t have time to let them sit in the fridge, be sure to pat them dry before adding the oil and seasonings. This recipe is so easy, so good and so cheap!

I wanted to start with this recipe because it is easily adaptable whether you are cooking for 2 or 10. Adjust the seasonings to how you like, the chicken will come out good no matter what!

Ingredients:

Drumsticks, chicken legs, whatever you call them… get enough for who you’re feeding! The 4 of us eat about 3 each, so I usually have around 12.

Olive oil.. enough to coat the legs! I usually use around 3 tablespoons, sometimes more sometimes less, your recipe will not be ruined by too much olive oil, just make sure the legs are coated.

Cajun Seasoning.. I love love love McCormick Cajun Seasoning. Unfortunately, it’s not sold everywhere and I have a hard time getting my hands on it. If you don’t have cajun seasoning in your cupboard, it’s so easy to make. Cajun is my all time favorite flavor. It’s all the good stuff- Paprika, Garlic Powder, Onion Powder, Cayenne, Salt and Pepper. I use about 2 tablespoons of each, sometimes heavy on the garlic but to me garlic = everything.

-That’s it! If you have drumsticks, olive oil and cajun seasoning, get ready for the best chicken leg of your life with no complaints from your fam!

As mentioned earlier, if you have time, take the drumsticks out of the packaging, put in a bowl and let sit in the fridge to dry out for at least an hour. More if you have the time, less if you don’t. If you don’t have the time just be sure the drumsticks are patted dry.

When ready to cook, preheat your oven to 425 degrees. Get a sheet pan, cover with foil to help with the mess and spray with nonstick cooking spray. Take your drumsticks and add olive oil and seasonings. Time to get your hands dirty.. coat those babies fully. You want the seasoning to look like its covering every spot of the chicken. If it’s not, add more! Place the drumsticks on your prepared baking sheet and put in the oven for 50 minutes, turning half way! Don’t forget to turn half way.

That’s it! Pair with some rice, mashed potatoes or buttered noodles. Add a veggie and some bread and your dinner duty is done for the night!
